Published

Ingredients
  • ¾ cup fine dry breadcrumbs
  • ¾ cup freshly grated pecorino or Grana Padano, or a combination
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 stick unsalted butter, melted
  • 1 large head cauliflower, cut into florets
  • ¼ teaspoon kosher salt
  • Warm marinara for dipping (optional)

Directions
  1. Preheat the oven to 425 degrees F. Line two baking sheets with parchment paper.
  2. Combine breadcrumbs, cheese, garlic powder and onion powder in a large bowl.
  3. Pour butter into another large bowl. Add the cauliflower, season with salt, and toss to coat in the butter.
  4. Add half of the cauliflower to the breadcrumbs, and toss well to coat thoroughly.
  5. Place on one of the baking sheets. Repeat with the remaining cauliflower and breadcrumbs. (Discard the remaining breadcrumbs.)
  6. Bake the cauliflower until it's deep golden brown and crispy, 25 to 30 minutes. Serve it warm with the marinara for dipping, if desired.
