Overseas vacay is out, overripe blueberries are in. This month we’re all making the best of cancelled plans and bursting summer produce by traveling via our taste buds instead. It should probably come at no surprise that July’s top 10 recipes are flecked with international flavors. We’re talking about a zesty, aromatic, loaded-with-herbs Thai salad. Tyna Hoang’s vibrant Vietnamese summer rolls, stuffed with turmeric-ey fried fish and crisp greens. A dreamy, creamy dessert typical in the Indian state of Gujarat that transforms humble yogurt into a saffron-studded masterpiece. And in all its velvety glory, Sami Tamimi and Tara Wigley's versatile Palestinian galayet banadoura (sautéed tomatoes with pine nuts and fresh mint) for your dipping and dolloping needs. So, until we can explore again, here are our most popular recipes from the last 31 days, starting with no. 1.

      Yum Nua

This adaptable Thai salad with beef, aromatics, and plenty of herbs and lime juice is as spicy as it is bright.

      Blueberry-Ginger Buckle

A member of the larger umbrella group of easy fruit desserts, a buckle features tons of fruit barely held together by tender cake. We're talking so much fruit that the cake buckles around it, hence the name. There are many regional buckle variations, and not all have a streusel topping. This particular recipe, however, has got lots of big crumbs—and we think you’ll be glad that’s the case.

      Vietnamese Turmeric Fish Summer Rolls

This recipe is Tyna Hoang's homage to Hanoi’s classic Chả Cá Lã Vọng, a dish of fried fish seasoned with turmeric, shrimp paste, and dill that’s served over vermicelli with lots of herbs and nước chấm, a fish sauce dressing. Her simplified version is married with the summer roll for a quick and refreshing nod to an otherwise perfect traditional recipe. In Vietnam, summer roll dishes are usually served deconstructed with platters of crisp greens, herbs, and accoutrements so guests can assemble their own rolls (post COVID-19, of course).

      Shrikhand

Shrikhand is yogurt in its dreamiest, creamiest dessert form, and it is one of my favorite sweets of all time. This impossibly smooth, thick, saffron-studded, I-can't-believe-I-made-this-with-yogurt treat is typical of the Indian state of Gujarat. When I'm back home in Texas, I make shrikhand with my dad’s homemade yogurt, but you can get that same silkiness with good-quality store-bought Greek yogurt. In what turned out to be a real game-changer, my friend Khushbu suggested putting shrikhand in a graham cracker crust and refrigerating it, like a no-bake pie. Shrikhand pie is an excellent idea, but I'm just as happy spooning it out of the bowl as is.
