- Ground Sausage- 1/2lb
- Onion- half
- Green Bell Pepper- half
- Red Bell Pepper- half
- Garlic- 2 cloves
- Pre-Cooked Rice- 1 1/2 cups
- Tomato Paste- 1tbsp
- Butter- 1tbsp
Cream Sauce:
- Tomato paste- 2tbsp
- Heavy Cream- 1/4cup
- Butter- 4tbsp
- Chicken Broth- 1/4cup
- Blackened Seasoning- 2tbsp
METHOD
- Start by making your blackened seasoning. Add old bay, salt, pepper, garlic powder, onion powder, smoked paprika, baking powder, brown sugar, oregano, and thyme to a bowl and whisk thoroughly.
- Slice chicken breast into thin slices and season generously with your blackened seasoning.
- Add your chicken to a medium heat stainless steel skillet and sear on both sides until your chicken reaches an internal temperature of about 150-155 degrees. Lower the heat and baste with butter. Remove the chicken and let it rest for at least 10 minutes.
- Into the same skillet add your ground beef and ground sausage and cook until browned. Remove and strain out the excess grease.
- To the same skillet, add in your chopped onion, bell peppers, and garlic. Cook until translucent. Add in your tomato paste and butter and let it cook into the veggies.
- Add back your cooked meat, as well as the pre cooked rice (I like to let the rice sit for at least an hour before using it). Combine well.
- For the sauce add butter to the same skillet. Let it melt and then add in your tomato paste. Cook the tomato paste briefly before adding in your chicken broth. Bring it to a simmer.
- Add in your heavy cream and your blackened seasoning and stir. Bring to a simmer and add in your grated Parmesan cheese
- Slice up your chicken, plate it over the dirty rice and pour some of the sauce over it.
